Although corned beef and cabbage is an Irish dish, it is more popular in the United States than it is in Ireland. Moreover, corned beef and cabbage, according to some Irish people, is about as Irish as Spaghetti and Meatballs!

Anyway, the secret to perfect corned beef and cabbage is... cooking it in a pressure cooker. So, off we go to the recipe:

4 Cups Cold Water or enough to cover ingredients
2 1/2 pounds Point Cut corned beef brisket
4 carrots cut into chunks
1 cabbage cut into wedges
6-8 potatoes, peeled and quartered
2 to 4 small onions
3 cloves garlic
2 bay leaves

1 teaspoon dry mustard
1 large sprig fresh thyme
salt and pepper
(any additional veggies you prefer)

Place brisket and water into the pressure cooker and bring to a boil. Add garlic, thyme and bay leaves and bring to high pressure. Maintain high pressure and cook 1.25 hours.

Carefully release pressure, remove lid, and add remaining ingredients. Secure lid and bring to high pressure. Maintain pressure and cook for 10 minutes. Release pressure, remove lid and enjoy!
